I enjoyed my fourth of July with family and friends. We spent a leisurely day on Canadohta Lake, in northeast PA.
My family has vacationed here for since my grandmother was a child. Its a great family friendly area.
Other dishes served included a cheesy yummy potato dish from Cooking Light (I believe this is the recipe here), a side salad, and amazingly fresh corn.
The chickpea salad/slaw was light and well received. I wasn’t sure if everyone was going to like but it seemed to go over well. It complimented the big grilled steaks and heavier potato dish. It was really easy and could be made with only a few ingredients.
The peanut butter oatmeal bars were good but not amazing. I did like that they were not overly sweet (I cut back the brown sugar in the recipe by a tablespoon or so).
